Raw Cacao Donuts (raw, vegan, gluten-free)
3/4 cup almond meal
3/4 cup oatmeal, gluten free
3/4 cup medjool dates (pitted & soaked in water for 10 minutes)
1/2 tsp vanilla, gluten free
4 Tbsp raw cacao powder
2 Tbsp cacao butter (melted by placing bowl of cacao butter in dehydrator or in warm water)
2 Tbsp maple syrup
2 Tbsp raw cacao powder
Raw pistachios, crushed
Mix almond meal and oatmeal in a high-powered blender or food processor. Add dates and vanilla and blend till ball forms. Add cacao powder and mix till well incorporated.
Form into balls and then shape the balls in to a snake shape connecting on the ends (shape like a donut). Put in freezer for 2-4 hours.
You can eat these donuts plain or frost them.
To make the frosting mix the melted cacao butter, maple syrup and cacao powder. Frost or drizzle donuts. We topped with crushed pistachios.
Keeps in the fridge for about a week or in the freezer for 4-6 weeks.
