Chocolate Chip Cookies (vegan, gluten-free, soy-free)

1/2 Tbsp chia seeds, ground
1/2 Tbsp flax seeds, ground
2 Tbsp water
2/3 cup vegan butter, melted
1/4 cup unsweetened organic apple sauce
1 cup firmly pressed pure cane brown sugar
1 cup organic pure cane sugar
1 Tbsp vanilla paste, gluten free
2 1/4 cup gluten free multi-purpose flour**
1 tsp pink Himalayan salt
1 tsp xanthan gum
1 1/2 tsp baking soda
1/2 tsp baking powder, aluminum free
10 oz. semi-sweet chocolate chips and/or chocolate chunks, vegan & gluten free

Preheat oven to 375 degrees.
In small bowl mix ground chia and flax seeds and water and set aside for 10 minutes.
In a separate bowl whisk together the dry ingredients flour, pink salt, xanthum gum, baking soda, and baking powder.
In food processor mix butter, applesauce, sugars, vanilla and water. Mix till well incorporated, but not over mixed. Mix in the chia/flax seed mixture.
Add the dry ingredients to the wet ingredients in the food processor (adding 1 cup at a time) and blend till cookie batter forms. Add the chocolate chips and stir.
Drop by spoonfuls on to baking sheet (use a baking sheet liner or parchment paper if possible). Bake for 10 – 12 minutes. Allow cookies to cool.

**Our Baking Flour Blend is:
3 cups brown rice flour
2 cups sorghum flour
1 cup sweet white rice flour
1/2 cup potato starch
1/2 cup arrowroot powder
