Cabbage and ‘Beef’ Stew (vegan, gluten-free, oil-free, soy-free, nut-free)

Ingredients:

1/2 head of cabbage, chopped
1/4 cup onion, diced
1/4 cup green onion, diced
1/2 cup celery, chopped
1/2 cup leek, chopped
1/2 tsp pink Himalayan salt
1/2 tsp smoked applewood sea salt
1 tsp Italian seasoning
Water (about 4 cups)
Fresh Herbs: Thyme, Sage, Rosemary, Bay Leaf

Put all ingredients in electric pressure cooker and set to cook for 20 minutes. When pressure cooker is done, add:

 

Additional Ingredients:

1 package Beyond Beef Beefy
1 bag of organic frozen peas
1/2 cup tomatoes, diced

Set electric pressure cooker on 3-5 minute cook time.

Ready to serve immediately.
