1 cup soft prunes (or soaked 3-5 hours to soften)
1/2 cup dates, soaked and pitted
1/2 cup maple syrup
1/4 cup extra virgin coconut oil, melted
1/4 cup peanut butter
1 cup organic oatmeal
1/2 cup raw cacao powder
2 tsp vanilla paste
Dash pink Himalayan salt
vegan mini-chocolate chips or chopped raw peanuts
Put all ingredients in a food processor and blend until you have a smooth consistency with no chunks.
Roll the dough into balls to a size of your preference.
Roll 1/2 of each ball in vegan mini-chocolate chips or chopped peanuts
Refrigerate for 2 hours and serve. Keep in the fridge in a tightly sealed container.
